BROILED BREADED PORK CHOPS 
4 pork chops each 1 inch thick
2 eggs, beaten
6 tbsp. bread crumbs
Salt and black pepper
2 tbsp. olive oil
3 tbsp. butter, melted
Juice of 1 lemon
1/4 c. grated Parmesan
1 tbsp. prepared mustard
1 garlic clove, split
1/2 tsp. cayenne pepper
1/3 tsp. crushed red pepper

Dip chops into beaten eggs, then into crumbs - do this twice. Sprinkle a little salt and pepper over chops. Preheat broiler. Place chops in lightly greased broiler pan 8 inches from heat. Broil slowly 10 minutes.

Mix all other ingredients to make a basting sauce. Blend well, discard the garlic. Spoon half the sauce over the chops. Cook slowly 20 minutes. Turn chops. Spoon remaining sauce over chops. Cook slowly 30 minutes more. Serve with spaghetti marinara or applesauce.
