CHICKEN CASSEROLE 
1 boiled, deboned chicken
2 c. cooked white rice
1/2 c. chopped green peppers
1 c. diced celery
1/2 c. sliced carrots
4 sliced green onions
1 can cream of mushroom soup
1 c. mayonnaise
Juice of 1 lemon
1 sm. Velveeta, diced

In small bowl mix cream of mushroom soup and mayonnaise. Add lemon juice and salt and pepper to taste. In large bowl, mix chicken, rice, peppers, celery, carrots, green onions. Add soup mix, last mix in cheese and place in large casserole dish. Bake at 350 degrees for 50 to 60 minutes. Serves 6.
