CHICKEN CASSEROLE 
1 chicken (or 4 breasts)
1 c. uncooked rice
1 c. green pepper, cut in sm. pieces
1 c. celery, cut in sm. pieces
1 c. onion, cut in sm. pieces
1 can cream of mushroom
1 bag frozen broccoli
1 (8 oz.) Velveeta
Potato chips for topping, optional
Almond slivers, optional

Cook chicken and cut into bite-size pieces. Cook rice. Saute green pepper, celery and onion in butter. Blanch broccoli and cut up. Cut cheese into tiny cubes. In a large bowl mix all together (almond slivers, optional).

Put all ingredients into an 8 x 10 inch glass dish. Add salt and pepper to taste. Add crushed potato chips on top before putting in oven. Bake at 325 degrees until bubbling.
