CHICKEN CASSEROLE 
1 c. cooked white rice
1/2 c. chopped onion
1/2 c. butter
1/4 c. flour
1 large can mushrooms
1 1/2 cups chicken broth
1 1/2 c. half and half
2 cups diced cooked chicken
1 tsp. salt
1/8 tsp. pepper
1 can cream of chicken soup

Topping:

15 Ritz crackers
3/4 stick butter

Cook onions in 1/2 c. butter till tender. Remove from heat, stir in flour. Add chicken broth, stir in slowly into flour mixture. Add 1/2 & 1/2. Cook until mixture thickens, stirring constantly. Add rice, mushrooms, chicken, salt and pepper. Put into casserole dish. Combine topping ingredients and sprinkle on top.

Bake at 350°F for 20-30 minutes.

Serves 8.
