CHICKEN AT THE RITZ | |
12 c. chicken breasts, cooked 1 c. slivered almonds 1 c. water chestnuts, sliced 1 c. diced celery 1 can seedless grapes, drained, or 1 c. fresh grapes 1 sm. onion, diced 1 can cream of chicken soup 1 can cream of celery soup 1 1/2 c. mayonnaise 3 tbsp. lemon juice 2 tsp. salt 1/2 tsp. pepper TOPPING: 1 stack Ritz crackers, crushed 1/2 stick butter, melted 1/2 c. shredded cheddar cheese Tear chicken into small pieces and place in buttered 11 x 13 inch casserole dish. Mix together next 5 ingredients and sprinkle evenly over top of chicken. Mix together the remaining ingredients and cover previous layers. Mix together topping ingredients and sprinkle evenly over top of casserole. Bake at 325 degrees for 30 minutes or until bubbly. Recipe can be prepared a day ahead and refrigerated until ready to bake. Serves 10 to 12 persons or more. |
