LEFTOVER OATMEAL COOKIES 
2 c. sifted flour
1 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. sugar
2/3 c. shortening
2 eggs
1 1/2 c. cooked oatmeal

Sift dry ingredients together. Add shortening and eggs and beat until creamy (about 2 minutes). Stir in oatmeal. Drop from teaspoon onto greased baking sheets.

Bake in a preheated 375°F oven for 12-15 minutes.

Yield: 4 dozen.

Good recipe. I used 1 cup wheat flour and 1 cup flour. Didn't sift dry ingredients but mixed well before adding shortening. I used pasty knife to blend shortening and then added beaten egg. Also I added 1/2 chopped pecans and dried cranberries. Guess I should rewrite and add as entire new recipe. LOL

Just made these. Had to adjust for the size of my eggs because the batter looked a little dry so I used three eggs. Also added dried fruit to them. They are great. I will make these again and again.

Simple recipe and made a good batch of cookies. A great way to use up left over porridge. Although would cut back amount of sugar to 3/4 cup. Otherwise very moorish.

Great way to used left over oatmeal!! I used organic whole wheat flour, 1/3 cup dark cacao,and a 1 cup beet pulp (left over from juicing beets) used stevia in place if sugar and coconut oil in place of shortening. I know, a lot of replacements but it was worth it!! Made these for a friend who has a "healthy" little smoothie bar. They were a hit. I will be making these again!

Great recipe for leftover oatmeal. Used butter instead of shortening. And added Craisins, light brown sugar, one egg and 1 cup flour because I had less oatmeal. And a touch of milk, because mixture was too dry. Still made lots of cookies!

These were yummy! I halved the sugar and added chocolate chips. The dough was really sticky but the cookies turned out fluffy and pretty :)
This is such a great recipe to have on hand when your 3-year-old decides not to eat his oatmeal!

I added vanilla as well as 2 bananas. Looked a bit wet so another 1/2 cup oatmeal, uncooked. We have a new love for banana cookies last 2-3 months so I experiment with a lot of cookie recipes!

Just made these and they are quite delicious! Made them vegan by leaving out the eggs and shortening. Used almond milk, mashed bananas, and a bit of coconut oil with applesauce instead. Chewy and delicious. Put raisins and cloves in half the batch. My 6 year old is going mad for more. Thanks!

Not too impressed. Not what I expected. I added a teaspoon of vanilla as others did. They didn't spread as usual and didn't have much taste. Not sure what happened as I followed the recipe exactly.
