CHICKEN CASSEROLE 
3 c. cooked rice
2-3 lbs. chicken, cooked, boned and diced
2 cans cream of chicken soup
1 1/2 c. mayonnaise
1 tsp. salt
1/2 c. chopped onion
1 (8 oz.) can sliced water chestnuts
5 tsp. lemon juice
2 (2 oz.) jars chopped pimento
2 c. chopped celery
4 oz. can mushrooms

Mix all ingredients together. Put in greased casserole.

TOPPING:

1/2 c. melted butter
2 c. crushed crackers

(I have used crackers or bread crumbs.)

Bake at 350 degrees for 45 minutes.
