BROCCOLI RICE CASSEROLE 
2 1/2 c. rice (UNCLE BEN'S® regular rice)
1 pkg. frozen chopped broccoli, thawed
1 lb. Velveeta cheese, shredded
1 can cream of chicken soup
1/4 c. chopped onions
1 c. chopped mushrooms
1 jar pimentos

Boil rice. Over medium heat mix chicken soup and package of Velveeta. Stir until melted. Drain rice. Saute onions and mushrooms in 1 tablespoon butter until tender. Mix rice, chicken soup and cheese mixture, pimentos and broccoli (drain excess water) together. Place in buttered casserole dish and bake at 350 degrees for 30 minutes. Can add chopped chicken also to make "Chicken Divan".
