APPLESAUCE RHUBARB MUFFINS 
1 1/2 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
1 egg
2/3 c. light brown sugar
2/3 c. applesauce
1/4 c. cooking oil
1 c. chopped rhubarb

Mix dry ingredients. Make well in the center; set aside. Beat egg, brown sugar, applesauce and cooking oil. Add all at once to flour mixture. Stir until moistened. Batter will be lumpy. Fold in rhubarb. Sprinkle top with cinnamon sugar. Makes 12 muffins. Bake at 400 degrees for 18 to 20 minutes.
