PECAN RAISIN MUFFINS 
1 3/4 c. flour
1/4 c. sugar
1 tbsp. baking powder
3/4 tsp. salt
1/3 c. butter
1/2 c. chopped pecans
1/3 c. raisins
1 egg
3/4 c. milk

Mix flour, sugar, baking powder and salt; cut in butter until mixture resembles coarse meal. Mix in pecans and raisins; beat together egg and milk. Add all at once to dry ingredients. Stir lightly to dampen dry ingredients. Fill 12 greased muffin cups about 3/4 full.

Bake at 400°F about 10 to 15 minutes.
