WILD DUCK JAMBALAYA 
2 ducks, cut in pieces
1 lb. of ham, cubed (or sliced smoked sausage)
6 tbsp. of olive oil
2 tbsp. of butter
3 med. onions, chopped
2 garlic cloves, minced
1 1/2 bell peppers, chopped
2 tbsp. chopped celery
4 tbsp. chopped parsley (optional)
8 c. canned chicken broth
2 bay leaves
Salt and hot pepper sauce, to taste
Pinch of thyme
4 c. raw rice

Lightly brown ducks and ham or sausage in olive oil and butter; add onions, garlic and bell peppers.
