APPLE GINGERBREAD 
20 oz. can sliced apples
1 tsp. cinnamon
1/4 tsp. salt
1/2 c. sugar
1/2 tsp. grated lemon rind
1 tsp. lemon juice
1/4 c. shortening
1/2 c. sugar
1 egg
1/2 c. molasses
1 1/4 c. sifted flour
1/2 tsp. salt
1 tsp. ginger
1/2 tsp. cinnamon
1 c. boiling water
2 teaspoon baking soda

Drain apple slices, combine cinnamon, salt, sugar, lemon rind and juice. Mix into apples and spread into 9 x 9 x 2 inch buttered pan.

Cream shortening and sugar, then egg, mix well and add molasses, sift flour, salt, ginger and cinnamon. Add soda to the boiling water and mix into creamed mixture alternately with flour mixture.

Mix well and pour over apples. The batter will be thin. Bake 45 minutes in 350 degree oven. Serve warm and top with whipped cream and cherry.
