GRAPE-NUTS APPLE BREAD | |
2 c. sifted all-purpose flour 2 1/2 tsp. baking powder 1 tsp. salt 3/4 tsp. cinnamon 1/4 tsp. nutmeg 1/8 tsp. allspice 1/2 c. Grape-nuts flaked 1 c. finely peeled & chopped cooking apples 2/3 c. packed light brown sugar 1/2 c. chopped nuts 2 eggs, well beaten 2/3 c. milk 2 tbsp. molasses 1/4 c. shortening, melted & cooled Sift together flour, baking powder, salt and spices into mixing bowl. Stir in brown sugar, cereal, apples and nuts. Combine eggs, milk, molasses and shortening. Add egg mixture to flour mixture and blend just until all flour is dampened. Pour into well greased 8 x 4 x 3 inch loaf pan. Bake in 350 degree oven for 60-65 minutes. Cool 10 minutes and turn out on cake rack. When bread is cool wrap in waxed paper, transparent wrap or aluminum foil. For best slicing and mellowing of flavors, store overnight. |
