PORK CHOP AND APPLE CASSEROLE 
4 pork chops
Salt & pepper
4 c. sliced apples
1/4 c. raisins
1 tsp. grated lemon rind
1/4 c. molasses
1/4 c. water

Brown chops in some fat trimmed from chops. Season with salt and pepper. Place apples and raisins in 2 quart greased baking dish. Sprinkle with lemon rind.

Combine molasses and water, pour over apple mixture. Top with browned pork chops. Cover and bake 1 hour in moderate oven 350 degrees. Remove cover and bake 30 minutes longer.
