PIZZA DOUGH AND ITALIAN BREAD 
1 pkg. yeast
1 tsp. sugar
1 tsp. salt
2 tbsp. olive oil
1 c. warm water (105 to 115 degrees)
4-5 c. flour (preferably King Arthur)

Combine first five ingredients and let yeast dissolve. Mix in 1 cup of flour with a whisk until creamy. Mix in 1 more cup flour and whisk for 2 minutes with wooden spoon. Stir in enough additional flour to cause the dough to pull away from the sides of the bowl.

Turn out on floured surface and knead until smooth and elastic (about 8-10 minutes). Put in greased bowl and turn to coat, top with grease. Let rise until doubled. Punch dough down. Divide into two and flatten for pizza dough or shape as loaf and bake at 400 degrees for 20-25 minutes or until hollow when tapped on top. 2 cups whole wheat flour may be substituted for 2 cups white flour.
