HEART HEALTHY APPLE OAT BREAD 
1 1/2 c. quick cooking old fashioned oats, uncooked
1 1/2 c. all purpose flour
1 1/2 tsp. baking soda
1 1/2 tsp. ground cinnamon
3/4 tsp. ground allspice
1/2 c. honey
1/2 c. skim milk
1/4 c. salad oil
3 egg whites
3 med. diced unpeeled green cooking apples (about 1 1/4 c. diced)

Preheat oven to 350 degrees. Spray 8 1/2 x 4 1/2 inch loaf pan with vegetable cooking oil. In large bowl mix oats and next 4 ingredients. In small bowl beat honey, milk, oil and egg whites until blended; stir into flour mixture just until moistened (batter will be lumpy). Fold in apples. Spoon batter evenly into loaf pan. Bake 65 minutes or until a toothpick inserted in center of bread comes out clean. Cool in pan 10 minutes. Remove to wire rack. Make 1 loaf, about 210 calories per serving.

I LOVE this recipe and have made it dozens of times during apple season. I modify it a bit by adding half whole wheat flour and half white flour and it still turns out nice and moist. Also, if I am feeling lazy, I use the whole egg instead of the whites and it still turns out fine. YUM!
