WANDI'S (TRADITIONAL ITALIAN
COOKIES)
 
1 doz. eggs
1 tbsp. sugar
4 tbsp. oil
1 tsp. baking soda
1/2 tsp. baking powder
Lemon extract to taste
Sifted flour

Beat eggs. Add sugar, oil and lemon. Keep stirring. Add some flour, powder and soda. Add flour until dough is the consistency that you can knead. Knead until stiff. Cut in small loaves, cover with cloth and let stand 15 minutes. Roll out thin, cut with wheel into strips. Make into bows and fry in hot oil. Drain on paper towels, sprinkle with confectioners' sugar.
