CUCUMBER & ONION SALAD 
3 med. cucumbers, peeled Leaving some of the green skin
1 tsp. salt
1 sm. onion, thinly sliced

DRESSING:

1/3 c. plain nonfat yogurt or sour cream
2 tbsp. sugar
3 tbsp. white vinegar

Thinly slice cucumbers; add salt. Toss and place in refrigerator for 1 hour. Rinse well and drain cucumbers. Add onion. Blend yogurt or sour cream, sugar and vinegar until smooth. Pour dressing over cucumbers and onions. Toss and chill for 4 hours. Serve cold.
