DOUBLE COOKED FRENCH FRIES 
Idaho or Russet potatoes
Deep fryer or lg. pot with 3" vegetable oil at about 375 degrees

Cut pared potatoes into slices and then into strips. Place in hot oil and fry until tender but not browned. Remove and drain. Cool or chill. When ready to eat, have grease or oil until hot (at least 375 degrees). Drop a few potatoes at a time in hot grease. Cook until browned. Remove, drain and set. Repeat until all are done. Better than frozen or single fried fries.
