FRENCH FRIED SWEET POTATOES 
1 med. potato per serving
Cooking oil
Powdered sugar

Peel and halve or quarter sweet potatoes. Cut lengthwise into thin strips. Drop into oil, 375 degrees. Strips will cook in about 30 seconds. Have spoon ready because they burn easily. Remove with a slotted spoon and drain on paper towels. Sprinkle with powdered sugar.
