GINGER CHICKEN 
7 lg. lemons, squeezed
3 tbsp. ginger, grated
7 cloves garlic, grated
1/2 c. soy sauce
6 lb. chicken, cut up (fresh)

Place lemon juice, garlic, ginger and soy sauce in a large ziploc bag and add chicken. Seal the bag and be sure to coat all chicken pieces. Marinate at least 24 hours and no longer than 48 hours.

Rotate bag occasionally to be certain chicken is evenly coated. When ready to cook: Allow chicken and marinade to come to room temperature and barbecue as usual. Serves 6-8. Good with Rice Pilaf.
