HONEY-GINGER CHICKEN 
3 tbsp. olive oil
3 tbsp. butter
1/3 c. flour
1/2 tsp. salt
1/2 tsp. ground or freshly grated ginger
1/4 tsp. pepper
3 lbs. chicken
1/3 c. honey
1/3 c. chili sauce
1/3 c. soy sauce
1/8 tsp. garlic powder

Heat oven to 425°F.

Heat oil and butter in a 9x13-inch pan. Mix flour, salt, 1/2 teaspoon ginger, pepper. Coat chicken with flour mixture. Place skin side down.

Bake, uncovered 30 minutes. Turn chicken, bake 15 minutes. Drain fat and spoon on sauce. Sprinkle with garlic powder.

Bake 15 minutes more, basting with sauce every 5 minutes.
