HONEY & GINGER CHICKEN 
6 to 8 pieces of chicken
3 tbsp. shortening
3 tbsp. butter

DUSTING MIXTURE:

1/3 c. flour
1/2 tsp. salt
1/2 tsp. ginger
1/4 tsp. pepper

SAUCE:

1/3 c. honey
1/3 c. chili sauce
1/8 to 1/3 c. soy sauce
1/2 tsp. ginger

Skin and debone chicken. Dust chicken in dusting mixture. Brown chicken in shortening. Place browned chicken in baking dish with butter. Mix sauce and cover both sides of chicken with sauce. Bake at 350 degrees for approximately 1 hour turning chicken half way through.
