CARROT APPLE CAKE 
1 1/2 c. sugar
1 1/2 c. oil
3 eggs
2 tsp. vanilla
2 c. sifted all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 c. shredded carrots
1 c. coarsely chopped apples
1 c. golden raisins
1 c. chopped pecans

1. Combine sugar, oil, eggs and vanilla in large bowl; blend thoroughly.

2. Sift dry ingredients together; add to first mixture; mix well.

3. Stir in carrots, apples, raisins, etc.

4. Pour into 2 greased, wax paper lined 9 inch cake pans.

5. Bake in preheated 350 degree oven 35-45 minutes until center of cake is firm to touch.

6. Cool in pans 10 minutes.

7. Remove from pans and finish cooling on racks.

8. Frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

2 (3 oz.) pkg. cream cheese, softened
1 tbsp. milk
2 tsp. vanilla
Dash salt
1 lb. confectioners' sugar
1/2 c. butter
1 pkg. (8 oz.) cream cheese
1 box (lb.) confectioners' sugar
2 tsp. vanilla
Salt
