SPICED APPLE - CARROT CAKE 
1 tbsp. light brown sugar (or Twin)
1/4 tsp. green ginger
1/8 tsp. nutmeg
2 c. diagonally sliced cooked carrots (tender crisp)
4 sm. apples, cored & thinly sliced
1 tbsp. & 1 tsp. reduced calories mayonnaise

Combine sugar, ginger and nutmeg. Spray casserole dish. Arrange 1/2 cup carrots. Top with apple slices and sprinkle with 1/4 sugar mixture. Repeat layers 3 more times ending with sugar mixture. Dot with butter. Bake until carrots and apples are tender. Bake 15-20 minutes at 350 degrees. Makes 4 servings. 1 vegetable. 1/2 fat. 1 fruit. 15 calories.
