LEMON-SWEET APPLES AND CARROTS 
1 lb. fresh peeled baby carrots
2 med.-sized apples, halved, cored and sliced 1/4 inch thick
2 tbsp. butter
2 tbsp. fresh lemon juice
3 tbsp. light brown sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg

In medium sized saucepan, combine carrots with water to cover; bring to boil; cover. Simmer 10 minutes, drain in a colander. In the same saucepan add butter, lemon juice, sugar, cinnamon and nutmeg. Add carrots and apples; toss to coat. Simmer for 10 minutes.
