“BANANA OATMEAL COOKIES” IS IN:

BANANA OATMEAL COOKIES 
3/4 c. oatmeal
3/4 c. sugar
1 egg, well beaten
1/2 tsp. baking soda
3/4 c. butter or shortening
1 to 2 small ripe bananas
1 1/2 c. flour
1/4 t. salt
1/2 t. nutmeg
3/4 c. chopped nuts

Spread oatmeal on cookie sheet and toast very lightly in 400°F oven. Beat together butter or shortening and sugar until light and fluffy.

Mash bananas and add to butter mixture; add egg. Beat until fluffy.

Sift together flour, baking soda, salt and spices. Add to butter mixture. Add nuts and cooled oatmeal. Blend thoroughly.

Bake at 400°F for 10-15 minutes (depends on size of cookies made) or until golden brown. Do not overbake. Cookies should still be slightly soft in centers.
