BANANA PUDDING | |
2/3 cup sugar 1/3 cup cornstarch or all-purpose flour 1/3 tsp. salt 2 cups milk, scalded 3 egg yolks (save egg whites) 2 tsp. butter 1 tsp. vanilla 6 large bananas, sliced vanilla wafers Blend sugar, cornstarch and salt. Slowly stir in hot milk. In a double boiler, cook and stir over boiling water until mixture thickens. Add 1/3 of the hot mixture to 3 well beaten egg yolks and gradually return to double boiler, pouring in a thin stream and whisking constantly until combined. Stir and cook for 2 minutes or until mixture coats the back of a wooden spoon. Remove from heat and allow to cool for 5 minutes. Stir in butter and vanilla. Line a casserole dish with crushed vanilla wafers (graham crackers may be substituted). Slice a layer of bananas over the crumbs. Alternate custard with sliced bananas and vanilla wafers in layers. Combine 3 tablespoons of sugar with 3 egg whites; beat until stiff peaks form and spread over the top of the custard. Brown lightly in 325°F oven. Submitted by: Belle |
