BREADED PORK CUTLETS 
1 lb. pork cutlets
4 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 beaten egg
4 tbsp. milk
1 tsp. cajun seasoning
1 c. fine dry bread crumbs
3 tbsp. corn oil

Cut meat into 6 portions. Coat meat with a mixture of the flour, salt, and pepper. Combine egg and milk.

Dip cutlets into egg mixture, then into the mixture of bread crumbs and cajun seasoning. Cook cutlets in a large skillet in hot oil for 3-4 minutes per side. Serves 4.

This recipe does not mention that pork requires more than 3-4 minutes to cook thru; I suggest to place on a rack with a drip pan under it and bake it in a 350°F oven for about 30-40 minutes after you have fried it in the pan. Pork must be at least 160°F before eating. Thank you for reading.

Usually a cutlet has been pounded very thin, so cooking 3 or 4 minutes per side should result in a thoroughly cooked piece of pork. Cooking in the oven would not be necessary unless it were a thick cut of meat.

I agreed with Karen. Pork needs to be cooked thoroughly. Although uncommon these days, pork is a source of trichinosis. I work in a medical lab and love to cook too, so I know these things. We pounded our tenderloins, but they are not super thin.

Okay kids, the cooking time obviously depends on the thickness of the steak (average 1/2" thick). If you're looking for a cooked and juicy steak, you need to be 7 to 8 minutes per side, using a frying pan, at approximately 300°F. If you're not watching, then you shouldn't be cooking.
