CLAM CHOWDER 
1/8 lb. salt pork (or 2 tbsp. butter, but it won't taste the same)
1 med. onion, diced
2 lg. potatoes, peeled & diced
Salt & pepper to taste
1 pt. minced sea clams
1 qt. whole milk, scalded

Dice salt pork and cook in saucepan until crisp. Remove pork and set aside. Saute onion in pork fat or butter until golden. Add potatoes and just enough water to cover. Season with salt and pepper, cover and bring to boil. Turn down and simmer until potatoes are just tender. Add clams, bring to simmer again and cook for just two minutes longer. (Pay attention, the price for making a phone call here is rubbery clams.) Add the hot milk. Season to taste and serve piping hot, adding bits of pork scraps or dots of butter. Serves 4.
