MAPLE-MUSTARD CAPON | |
2 1/4 tbsp. maple syrup 1 1/4 tbsp. mustard 1 1/2 tbsp. butter 1 tsp. thyme 1 capon (3-4 lbs.) Combine maple syrup, mustard, butter and thyme. Preheat oven to 325 degrees. Baste capon, place in oven, breast side up. Cover loosely with foil. Baste as needed, 3 or 4 times. Remove foil during the last 30 minutes. Cook for 1 hour per pound - 3 1/2 to 4 hours. |
