YELLOW CHEESE 
12 eggs
Sugar to taste
1 qt. milk
Pinch of salt
1/4 tsp. vanilla
1/4 tsp. cinnamon

Beat eggs; add slowly to hot milk and sugar. Add salt, vanilla, and cinnamon. Boil slowly until lumps appear and mixture thickens. Put cheese into a cheese cloth bag. Hang to dry completely. Store in refrigerator until ready to use.
