FRUIT COCKTAIL CAKE 
1 1/2 c. sugar
1 stick butter
2 eggs
3 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 #303 can fruit cocktail, undrained

Cream together the sugar and butter. Beat in eggs. Sift together the flour, salt and soda; add to creamed mixture. Fold the vanilla and fruit cocktail into the above, but DO NOT STIR. Pour into greased and floured 9 x 13-inch pan and bake at 300 degrees for 1 hour.

ICING:

1 c. sugar
1 sm. can evaporated milk
1 stick butter
1 c. coconut
1 tsp. vanilla
1/2 c. chopped nuts (optional)

Boil together sugar, milk and butter for 2 minutes, stirring constantly. Add coconut, vanilla and nuts. Let icing cool. Spread on top of cake.
