SALMON SOUFFLE | |
4 tbsp. butter 5 tbsp. flour 1/2 tsp. salt 1 c. milk 6 egg yolks 1 1/2 c. salmon 6 egg whites Melt butter over medium heat. Add flour and salt to make a paste. Add milk. Mixture will thicken. Remove from fire. Add egg yolk and salmon (set aside to cool). When mixture cools, beat the egg whites from the 6 eggs until stiff. Fold in mixture. Pour in buttered dish. Bake at 300 degrees for 1 1/4 hours. |
