GLUTEN FREE FISH AND CHIPS 
2 lbs fish fillet (any white fish, but cod is more authentic)
1 cup rice flour
2 tsp baking powder
1 tsp salt
1/4 tsp paprika
1/4 tsp garlic powder
1/2 tsp dill weed
3/4 cup Bard’s Tale beer
2 eggs

Preheat oven to 250°F.

Gently wash the fish in cold water, make sure to pat the fillets dry with plenty of paper towels. For large fillets, you may want to cut the fish into smaller pieces.

Mix dry ingredients in a large bowl. Mix beer and eggs separately then stir into dry ingredients, mix until mixture is smooth. Place fish fillets in batter mixture; coat well, and let stand for 10-15 minutes.

Heat oil to 350°F; gently place small batches of fish in oil to avoid dropping the oil temperature. Fry until golden brown, about 5 to 8 minutes, turning the fillets regularly to prevent scorching the batter.

Remove fish to paper towels to drain excess oil. Keep warm in oven until all the fish are cooked.

For a more authentic fish, use cod and skip all the seasoning except the salt. However, since I am not aware of a gluten free Malt Vinegar, I add the spices to give the batter a little more flavor than the beer alone would.

This batter works well with all kinds of fish and shrimp. If you want to eliminate the beer, try using milk.

Cooks Note: Try using carbonated water in place of beer. Serve with Hot Fries.

This was the greatest batter not only for the cod, but we did shrimp. It was delicious. I am going to use this batter to make my own corn dogs. This was the best batter ever. I used the gluten free all-purpose flour, Redbridge beer, eggs, some garlic and parsley, lemon pepper and salt. Thank you!

Is Bard's Tale gluten free?? Your typical beer is not gluten free. You should be careful when posting recipes that are titled GF because people who might not know everything that is GF might make this for someone who is celiac & not realize it's not safe.

i am going to try this. on the note of gluten free vinegar you could use BRAGGS LIQUID AMINO ACID. I use it for all gluten free vinegar or soy substitute.

Absolutely fantastic batter. My little girl is Celiac and we have trouble finding foods she likes. We went to a gluten free chip shop and she loved the food so much she was sat there making yummy noises all the way through. I have just made this batter on chicken and will try it with fish. She loves it so much. Thanks for the recipe as I have tried many and they have always turned out awful. Very much recommended from a very happy 8 year old :)

This was so good I couldn't believe it. My Celiac Daughter was lamenting the fact that she can never have anything deep fried at restaurants. When I made this I figured it would be another recipe that I wasted time and money on because she is so picky. This time I hit the jackpot! I get very excited when I finally find something she likes. I tried it with the beer and got the extra benefit of trying a gluten free beer which was really good. My husband who usually turns up his nose at gluten free foods even liked it. Here is one tip - the seafood person at the grocery cut the fish into the correct sizes.

Those with gluten allergies (Celiac) versus just minor intolerance will not be able have food that had beer in it. Its made with grains that typically have gluten.

Since rice flour is so expensive try using corn flour... sold at Aldi's for $1.39. Works very well for fish, especially cod. For a crispier crust you can also use a 1/2 cup corn meal added to the corn flour (not corn mix) and a tablespoon of corn starch for binding the batter to the fish.
