TRACI'S CHIPS AND FISH | |
1 cup mayonnaise 2 tbsp. fresh lime juice (lemon juice is great too) 3-4 fish fillets, rinsed and dried (your choice) 1 1/2 cups crushed corn chips (I use Fritos) lime wedges, for garnish Preheat oven to 425°F. Mix mayonnaise and lime juice. Spread on both sides of fish fillet Place the crushed corn chips on wax paper and dredge both sides of the fish in the chips. Shake off the excess chips. Place the fillets on a foil covered baking sheet and bake at 350°F for 15 minutes or until the fish flakes. Serve with lime wedges. Submitted by: Traci |
