CRAB QUICHE 
1/2 lb. crabmeat or 1 can chunk style tuna, drained & flaked
1 c. shredded Swiss cheese
1/4 c. Parmesan
1/4 c. chopped green onion
1 jar diced pimento, drained
3 eggs
1 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. ground nutmeg
Parsley sprigs
Any good butter crust

Press pastry over bottom and up sides of 1 1/2 inch deep 9 inch quiche dish or pie pan. Pull out pastry about 18 inch thick, fit in pan. Place a piece of foil inside pastry shell partially fill with uncooked beans or rice. Bake at 425 degrees for 10 minutes. Lift off foil with beans. Bake pastry another 5 minutes. Remove and cool pastry. Reduce oven to 350 degrees.

In even layers, distribute crab, Swiss cheese, Parmesan cheese, green onion and pimento in pastry shell. In bowl beat eggs, milk, salt, pepper and nutmeg. Pour over layers in shell. Bake 45 minutes or until knife inserted comes out clean. Let stand 10 minutes. Makes 6 servings. Garnish with parsley sprigs.
