olive oil 200g (about 1/2 lb) bacon 1 onion 100ml (3 1/2 fl oz) Lea & Perrins Worcestershire sauce tabasco sauce 15 oysters in half shell lemon wedges Cut bacon into fairly fine strips. Finely cut up the onion. Slightly cook the bacon in pan with a little olive oil. Drain and retain oil. Return oil to pan and saute onion. Add more olive oil if needed. Don't overcook. Remove onion, drain oil and add to bacon in bowl. Add the Worcestershire sauce to the bacon and onion mix. Season with Tabasco sauce to taste and mix well. Add this mix to to the oysters in half shell on a tray, place under grill in stove and brown the bacon mix. (this doesn't take too long). Serve with lemon wedges. Submitted by: BH |
