SIMPLY FRIED OYSTERS 
15 large shucked oysters
1 cup Bisquick baking mix
2 large eggs
1 tbsp. water
1 sleeve saltine crackers, finely crushed

Heat deep fryer to 375°F.

Beat eggs with water. Dredge oysters in baking mix, dip in egg then roll in cracker crumbs. Lay on rack and let coating set for at least five minutes.

Fry in hot oil until golden brown, about 2 minutes. Drain briefly on paper towels.

Serve hot with cocktail sauce.
