FRED'S OYSTER STEW | |
2 (8 oz. ea.) tubs fresh oysters, drained and rinsed 1/2 cup (1 stick) butter (no substitutions!) 1 to 2 heaping tbsp. minced garlic (I use the jar kind) 3 to 4 shakes Old Bay seafood seasoning 2 to 3 shakes white pepper 1 to 2 shakes Tabasco hot sauce 1 shake Worcestershire sauce (Lea and Perrins) pinch of allspice 1 (29 oz.) can Veg-All mixed vegetables, drained (I prefer Homestyle) 8 cups milk (more or less) fresh ground black pepper (add to each serving) In large saucepan put butter and oysters to sauté over medium heat. Also add garlic, Old Bay, white pepper, Tabasco sauce, Worcestershire sauce and a healthy pinch of allspice. Cook oysters until edges curl or to your desired consistency if you like them to shrink down more. Add Veg-All and milk until pot is 80% full. Reduce heat to simmer and cover with lid. DO NOT BOIL. Stir frequently. After 20 to 30 minutes reduce heat to low for another 1/2 hour. Serve with saltine crackers. Serves 2 real eaters or 4 to 6 little girly men. Submitted by: Fred Smallwood |
