CARIBE EAST COAST FRUIT SALAD 
This is a wonderful Caribbean-influence fruit salad which is served in a famous US East Coast grill.

1 mango
1 banana
1 papaya
1 pineapple
Juice of 2 limes
1 red onion, finely chopped
8-12 cilantro leaves, chopped (depends on size)
1-2 tablespoons Hot Sauce (or to taste)

Use only ripe and sweet fruit. Wash, peel and cut into 1/2-inch cubes.

In a salad bowl, combine fruit with lime juice, onion, and cilantro. Add hot sauce and mix well. Taste and adjust level of heat, adding more as desired, for as much as 3 tablespoons (to suit your diners).

Let flavors mellow for 1 to 2 hours, mixing occasionally. Serve with chicken, pork or fish.

Variation: Add 1 seeded, peeled chopped cucumber for a different flavor; use basil instead of cilantro (the basil is an acquired taste that may take some getting used to but can become addictive!).
