SWEET SALAD DRESSING FOR FRUIT SALAD | |
1/4 cup freshly squeezed lemon juice 2 eggs, beaten 1/4 cup orange juice 1/2 cup sugar 1/2 cup whipping cream, whipped 1/4 cup pineapple juice Heat fruit juices in double boiler. Beat sugar into beaten eggs, add to hot liquid, and cook until mixture coats a metal spoon (about 3 minutes). Set the upper half of a double boiler in a dish of cold water. Beat mixture until cold (about 5 minutes). Just before serving, fold in just-whipped cream. Any acid fruit juices may be used. Serve over chilled canned, fresh or frozen thawed fruit. Can also be served with raw vegetables as a dip or as a sandwich spread for ham or turkey sandwiches. Total time 25 minutes. Makes about 16 generous 1 oz. servings or approximately 1½ cups.
