SPINACH SALAD WITH SWEET & SOUR
DRESSING
 
2 lbs. (about 2 bunches) fresh spinach, wash, trimmed, dried & torn in bite size pieces

DRESSING:

1 1/4 c. vegetable oil
1/2-3/4 c. confectioners' sugar
1/4 c. apple cider vinegar
1 tbsp. fresh lemon juice
1 1/2 tsp. dry mustard
1 1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. ground ginger

Choose several of the following: 1/2 c. golden raisins 1 1/2 c. Jerusalem artichokes, peeled & sliced (See Note) 1/3 c. thinly sliced green onions, including green portion 2 tbsp. toasted sesame seeds 3 red apples, cored & cut into bite sized chunks 1/2 c. dry roasted peanuts

Toast sesame seeds in a small skillet over medium heat for about 10 minutes, or until golden, shaking pan frequently. Cool.

Combine dressing ingredients and set aside.

At serving time, place spinach leaves in a large bowl. Add and toss several of the suggested salad ingredients. Toss with dressing and serve.

NOTE: Also called sunchokes or sun roots, Jerusalem artichokes are a tuber or root vegetables.
