SALMON AND PEANUT BUTTER STEW 
1/3 c. chopped onions
1/3 c. chopped celery
1/2 - 1 bell pepper, sliced
1/4 tsp. ginger
2 1/2 tbsp. butter
1 can tomatoes, chopped
1/2 - 2/3 c. water
1 tsp. salt
1/4 tsp. ground turmeric
1/2 tsp. pepper
1 1/2 c. peanut butter
5 c. cooked rice
2 to 4 salmon steaks
2 slices of lemon or 1 tsp. lemon juice

Saute onion, celery, and bell pepper in the butter. Add salt, ginger, turmeric, pepper, tomatoes, and water; bring to boil. Cover. Simmer for 20 minutes at medium heat. Season and broil salmon until done. Heat peanut butter until it's melted and add to mixture. Place salmon on bed of rice. Squeeze lemon juice on salmon and cover with stew and serve.

You know.... I have no IDEA why this was delicious. I mean salmon and peanut butter? My husband and I just had to know. Would definitely make it again! Turned out to be really good! Still not sure why...... but :)
