DRIED CHERRY MUFFINS 
4 cups all-purpose flour
2 tbsp. baking powder
1 tsp. salt
2/3 cup sugar
1 (8 oz.) can applesauce
1 cup pineapple juice
3 large eggs
3/4 cup vegetable oil
2 cups dried sour cherries or cranberries

Mix all dry ingredients. Add wet ingredients - do not over stir.

Spray muffin pans with pan release (Baker's Joy). Fill muffin cups 3/4 full.

Bake at 400°F for 15 minutes or til done.

Makes 24 muffins
