MUSTARDY OVEN-BAKED CHICKEN 
8 (3 oz.) chicken breast halves, skinned
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. prepared mustard
1 egg
1/4 c. plus 2 tbsp. grated Parmesan cheese
1/4 c. soft bread crumbs
Vegetable cooking spray

Sprinkle chicken breast halves with salt and pepper. Combine mustard and egg, beating with a wire whisk until well-blended. Combine cheese and bread crumbs, stir well.

Dip chicken in egg mixture then dredge in bread crumbs. Let stand at room temperature on waxed paper 10 minutes to set coating. Transfer chicken to rack of a roasting pan coated with cooking spray. Bake at 400 degrees for 40 minutes or until chicken is done and coating is lightly browned.
