APPLE BREAD OR MUFFINS 
4 c. chopped apples
1 c. nutmeats
2 c. sugar
3 c. all-purpose flour
2 tsp. baking soda
1/4 tsp. nutmeg
1/4 tsp. allspice
3/4 tsp. cinnamon
1 c. (2 sticks) butter, melted
2 tsp. vanilla
2 lg. eggs, beaten

In large bowl put apple, sugar and nutmeats together. Let stand for 1 hour to get its own juice. Stir to mix. Mix flour, baking soda, salt and spices together. Add the apple mixture and stir well. Then stir in the melted butter and vanilla. Add egg last.

Pour into small bread tin or muffins (fill 2/3rds). Bake at 325°F for 1 hour and 10 minutes (bread) or 20 minutes (muffins). Freezes well.
