ITALIAN DOUGHNUT (ZEPOLA) 
2 c. flour
1 1/2 lbs. Ricotta
3 eggs
4 tsp. sugar
4 tsp. baking powder
Confectioners sugar (Topping)

Mix all ingredients together. Fry in oil (I use Wesson). Drop in oil using a teaspoonful. As they fry they roll over themselves.
