ITALIAN DOUGHNUTS 
1 lb. Ricotta cheese
4 eggs, slightly beaten
4 tbsp. sugar
2 c. Presto cake flour

Mix all together to form a thick batter. Drop by teaspoon into deep fryer and fry until golden brown. They will turn by themselves. Drain on paper towels.

Hi Marion,

You can use any kind of cake flour, such as Swans Down or Softasilk which can be found in boxes at the supermarket. It isn't interchangeable with self-rising flour. Best served freshly made, either still warm or at room temperature.
