KAREN'S TACO CHICKEN DISH 
Chicken Breast cut up into bite sized pieces
1 envelope Taco seasoning
1/2 jar of apricot preserves
1 jar of salsa

Cut up raw chicken breast into bite sized pieces. Toss chicken pieces in Taco seasoning using a brown bag. Brown chicken in a skillet using butter. Add apricot preserves and heat until melted. Pour in salsa. Stir together. Cover the mixture while cooking. Turn heat down to a simmer for 15-20 minutes.

Serve over rice or pasta.

You can substitute a can of Contandena Sweet and Sour Sauce for the preserves to give it a little different taste.
